My hometown is Zhejiang and the food from here is huai an and yangzhou. It is not very spicy and very welcomed to the foreigner in the government. Famous food is like Lion’s Head, Kan-ssu. My favourite dish only appeared in the Spring it is something growed under the water, its a vegetable and we use the bottom of it and it is paired with smaller Lions heads. My mother makes very good Lion’s head in the old way. Old way Lion’s Head is made with 山药 and only some pork and eggs. It has many ways to cook but the real one is just boiled with water.
