Vocabulary
Cooking Techniques:
braise V. / braised Adj. – to cook (meat, fish, or vegetables) by sautéeing in fat and then simmering slowly in very little liquid.
eg:Hongshao rou is braised red pork.
Simmer – cook at a low heat for a longer time
Season – to put seasoning/spices, like salt, pepper, cumin, sichuan peppercorn
Boil –
Boil the water. Boil the chicken.
Fry
Bake
Toast
Roast
Steam – to cook over boiling water, with the hot air.
Steamed vegetables are very healthy.
Preparation techniques:
Cut:
Dice – cut into small squares
Chop – big cuts
Slice N. V. – a thin or flat piece of something cut
Blend – cut and mixed all together
Stir – mix together, usually moving a spoon in a circle
Whip V. – to stir vigorously (very strongly)
change the consistency of the liquid. Whipped cream, is often put on pies or even coffee.
Dishes/Foods:
Pasta – Italian noodles
eg: Most pasta sauces are simmered for a long time.
Curry – Ga li
Cumin – ziran, a seasoning/spice used in Mexican cooking.q
Cayenne – niu jiao jiao, a spicy chili
Steak – niu pai
Smoothie – blended fruit or veggies and sometimes yogurt
