cuisine (n): 1-a style of cooking:

Sichuan pepper-花椒

umami鲜味-a strong taste that is not sweet, sour, salty, or bitter and that is often referred to as “the fifth taste”:
E.g.: In order to obtain a rich, umami flavor, the ingredients should be simmered for many hours.

Simmer (v): 1-to cook something liquid, or something with liquid in it, at a temperature slightly below boiling:
E.g.: Leave the vegetables to simmer for a few minutes.

acquired taste后天味觉, something that you may not like at first, but begin to like after you have tried it:
E.g.: You can try drinking it, although it’s something of an acquired taste.

ripe (adj)成熟的, (of fruit or crops) completely developed and ready to be collected or eaten:
