How to make chicken congee
Ingredients: chicken, rice, water, green onion, chilli oil S&P, (salt and pepper)
Tools/Equipment you will need: knife, cutting board, big pot, 2 med. (medium) bowls, med. ladle
1) first clean whole chicken (keep the head and feet)
2) fill a big pot with water and boil
3) when the water boils add the whole chicken, cook for 20-25 min
4) remove the chicken and cool
5) put cool chicken on the cutting board and use a big Chinese knife to cut into big pieces
6) take the chicken meat off the bones and shred it, set aside
7) keep or set aside 5-6 ladles of chicken stock with chicken fatÂ
8) wash 1/2 cup of rice, set aside
9) in a large pot, add water, rice, and chicken stock
10) on a gas range/burner, boil the mixture
11) when the mixture boils, lower/reduce the heat/temperature
12) Add S&P to taste
Tip: If you like Vietnamese congee, you can also add a little sugar and fish sauce.Â
13) cook the rice for 40min – 1 hour on low heat
14) When the rice is soft / Taste the rice to see if it is cooked or soft, then put the congee in a bowl and top with chicken meat, chopped green onion and chilli oil if you like.
