I like to combine vinegar (1 tsp), chopped chilli (2 Tbsp if you like really spicy), Sichuan pepper (1/2 tsp), salt (1 tsp) and sugar (1/4 tsp) together to cook white cabbage as a stir fry. I prefer to use chopped chilli over chilli oil (laoganma) because it’s more fragrant (smells better) and it tastes spicier.

The first thing is to add the oil to the wok until the oil is very hot (for 1 or 2 minutes) Put the sichuan pepper in first and then switch the fire (reduce heat/switch to low heat), then when the Sichuan pepper smells in the air (becomes fragrant or is toasted) then you can put some white cabbage into the wok. Turn the fire up (switch to high fire) then you can fry everything together. After 1 minute you can put (add) sugar, then fry again.  After that, put some salt and vinegar in the wok. (The final step/lastly) Then put the chopped chilli into the wok and keep frying (tossing) for another 2 minutes. Serve hot with white rice. It tastes good with rice.
