Original:

Shrimp dumpling is my favorite in Guangdong food. It represents multi features of Guandong food, like steaming way of cooking, respecting original flavor with very limited seasoning, presentation, and best balance of mixed stuffing.
Guangdong food is quite different from Liaoning one, despite that they are both delicious. I think the difference is originally impacted by climate difference. In Guangdong, warm & humid environment enables sufficient food resource. There is no snowy winter, so vegetable is available across all seasons & quite diversified. Like bamboo shoots in shrimp dumpling, bamboo even don’t grow in Liaoning. Therefore, Guangdong dishes are more diversified & with more fresh material than Liaoning ones. Common winter dish pickled vegetable in Liaoning is never seen on Guangdong table.
Cold weather in Liaoning also impact the way of cooking food. Boiling dish with hot soup is always served in winter, in which meat always play a leading role to provide enough calorie. Even snacks are heavier in Liaoning. Like cameral treats, its calorie is incredibly high, even comparable with a normal meal in only one serve.

It represents many features of Guangdong food: the food is steamed / steam cookedthere’s a clear respect for / effort to preserve the original flavor with very limited seasoning, the presentation is simple yet beautiful, and the mixed stuffing is very balanced.
Guangdong and Liaoning cuisines are quite differenteven though they are both delicious. I think this contrast is mainly due to climate differences. For example shrimp dumplings are made with bamboo shoots, but bamboo doesn’t even grow in Liaoning. Therefore, Guangdong dishes are more diverse and with more fresh ingredients than Liaoning ones. Pickled vegetables, a common winter dish in Liaoning, is never seen on Guangdong tables.
