As Christmas is coming, roasted chicken will be perfect main course for your party. It seems complicated to make but actually it is very easy.

The key to success is preparing one night in advance. Firstly, choose a chicken at about 600g-1kg, a smaller one should be more tender. clean and dry it with kitchen roll. grind salt and pepper on its body and move them, you can also put some herb in the kitchen‘s belly, thyme, rosemary, garlic, lemon all could be good choices. Put the chicken in the fridge when everything done.

the next day,take out the chicken from fridge 3hours before dinner time. prepare some vegetable as side,you can choose potato,carrot,pumpkin,mushroom or anything you like,but remeber do not use vegetable with too much juice. Season them with salt and pepper and olive oil. put the vegetable in your biggest roast pan and then put the kitchen on the top,use a brush to put some mixture of honey and butter on the skin of the chicken.

put the chicken in the oven at 220 degree for about 1 hour,and then take it out with oven mitt.
