There are many different kinds food in China, such as Sichuan food, Yunnan food,Yue food,etc. Amoung these , I like Huaiyang food most which come form my hometown Huaian city .
The essence of Huaiyang food is to remain the original taste of the materials ,you don’t need much flavor seasoning in it, just cooking in a easy way.
It seems Huaiyang food is easy and ordinary, but if you want to do it well ,the high skill of cutting and slicing is very improtant ane necessary. There is a very famous dish of Doufu soup, the Doufu is cut just looks like the leafs of chrysanthemum, so you should cut it into many slim strips and never break.
beside this, lion’s head is another famous one in Huaiyang food,but you may can’t eat it in the normal life. The authentic Lion’s head usually made by the professiona chef, it is not fry but just boiled by water,it can really relect the pure tast of the food,and it mostly made by whole pork. In the daily life of the family in Huaian or Yangzhou,they usually made it mixed by porkã€Chinese yamã€eggs and flour,then fry it in the oil,and these one usually smaller than the anthentic one. because they are fryed,so they can keep for a long time and can made many different dishes with other things.
There are lots of story in the different dishes of Huaiyang cuisine, and it is well accepted by most of people,and you should try it if you have the chance.you’ll love it.
