Vocabulary

acquired taste (n): 1-something that you may not like at first, but begin to like after you have tried it:
E.g.: Baijiu is very much an acquired taste.

sorghum (n): 1-高粱

fermentation (n)发酵, the process of the sugar in food or drink changing into alcohol because of a chemical process:
E.g.: Ethanol is an alcohol produced by fermentation of sugars.
E.g.: Fermentation takes about 48 hours.

ferment (v): 1-If food or drink ferments or if you ferment it, the sugar in it changes into alcohol because of a chemical process:
E.g.: You make wine by leaving grape juice to ferment until all the sugar has turned to alcohol.

distillation (n)蒸馏, the process of heating a liquid until it becomes a gas, then making it liquid again by cooling
E.g.: It usually takes couple of hours for distillation to be finished.

distill (v): 1-to heat a liquid until it changes to a gas and then make it liquid again by cooling:
E.g.: distilled water/whiskey

requirement (n): 1-必要条件, something that you must do, or something you need:
E.g.: A good degree is a minimum requirement for many jobs.

Speaking exercise

Baijiu is a traditional Chinese liquor, and there are many of different types of Baijiu. For example, Moutai and Wuliangye are different flavor types, because it needs 5 years to make a bottle of Moutai and it only needs one year to make Wuliangye. they’re made  OF sorghum. Sorghum are used to ferment for a few months to become alcohol and then distill after that it gets stored for a long time. The can only made in specific place because of requirements of  the fermentation like bacteria, water and weather.

For example, Moutai and Wuliangye are different flavor types, because it takes 5 years to make a bottle of Moutai and it only takes one year to make (a bottle of) Wuliangye. They’re made  OF sorghum. sorghum is left to ferment for couple of months in order to become alcohol and then distilled, after that it gets stored for a long time. These can only be made in a specific area because of the requirements of  the fermentation, like bacteria, water and weather.
